We’re putting a healthy twist on the great tradition known as "Taco Tuesday"! These tempting tacos are wrapped in a warm tortilla, topped with avocado, red cabbage, onion and cilantro.
The true star of this recipe is the zesty marinade made with Mettrum Originals™ Cold-Pressed Hemp Oil. Want your tacos spicy, add in a minced jalapeno to the marinade.
¼ cup of Mettrum Originals Cold-Pressed Hemp Oil
1 ½ tsp. child powder
1 tsp dried oregano
½ tsp. ground cumin
1 jalapeno, minced (optional)
¼ cup cilantro, minced
4 pieces of cod
Salt to taste
8 fresh corn tortillas
In a small bowl, create your marinade by combining hemp oil, chili powder, oregano, cumin, salt and jalapeno.
Pour marinade over the pieces of cod, making sure to fully coat them.
Let marinate for 30 minutes.
Heat a pan in medium to high heat
Sear the fish for 3 minutes on both sides
Remove and flake fish. (Make sure to scrape the pan, it’s the best part)
Add fish to fresh warm tortillas and top as desired
