Spring has finally sprung and we're greeting the season by making dishes featuring fresh, bright flavours. This Lemon Poppy and Hemp Seed Loaf is moist, flavourful and pairs perfectly with your morning coffee.
This breakfast goody Is made using Mettrum Originals protein packed Hemp Seed Flour and Raw Shelled Hemp Seeds.
If you're using our hemp flour for the first time, we suggest substituting up to 25% of the recipes total flour content.
1.5 cups all purpose flour
1/2 cups Mettrum Originals Hemp Seed Flour
1 tbsp. baking powder
½ tsp. salt
½ cup Mettrum Originals Raw Shelled Hemp Seeds
1/4 cup sugar
½ cup vegetable oil
½ cup Greek yogurt
¼ cup milk
1 tsp vanilla
1 lemon, juiced and zest
Preheat oven to 375 F degrees
In a large bowl combine flour, poppy seeds, hemp seeds, sugar, baking powder and salt.
In a second bowl whisk together lemon juice, vegetable oil, vanilla, milk, eggs and lemon zest.
Slowly combine dry and wet mixes, constantly stirring.
Pour mix into a greased loaf pan, or an 8’ round pan.
Bake for approximately 45 minutes, insert a toothpick into the center, when it comes out clean your Lemon Poppy and Hemp Seed Loaf is done!
