Hemp Seed Crepes

Crepes are often passed over for their cousin, the pancake, but this classic French breakfast is nothing if not divine. These Hemp Seed Crepes are delicious and buttery to the last bite. Try them on their own, or top with fresh fruit.
 
These buttery crepes were made with Mettrum Originals Raw Shelled Hemp Seeds. Easy to make, crepes are lighter and healthier than a pancake. You won’t have to avoid the scale come Monday morning.

 

Ingredients:
½ pint fresh blackberries
½ pint fresh blueberries
1 cup all-purpose flour
2 tbsp. Mettrum Originals Raw Shelled Hemp Seeds.
1 pinch of salt
3 large eggs
1 ¼ cups almond milk
2 tbsp. melted butter

Directions:
In a blender combine flour, salt, hemp seeds, almond milk, eggs and butter.
Blend for 30 seconds until the mixture bubbles on top. 
Let the mixture rest at room temperature for 15 minutes.
Heat a nonstick or cast iron pan over medium heat. 
Lightly coat with butter.
Whisk batter before pouring on to the pan. 
Cook for 1 minute on each side, until golden brown.
Plate and top with fresh blueberries and blackberries.
