Chickpea salad is extremely tasty and has the added bonus of being a very simple dish to prepare. Packed with high protein ingredients, this recipe doesn’t skimp on nutrition. More than just delicious, this bright and yummy salad is good for your health.
We’ve used Mettrum Originals Cold-Pressed Hemp Oil as the base to combine all the ingredients together and added in our Raw Shelled Hemp Seeds for a little nutty flavor. The fusion of hemp, lime and cilantro is deceivingly delightful.
This recipe is not overly complicated; you can easily swap out ingredients to suite your own taste or based on what’s available in your vegetable crisper. If you love spice, try adding in a teaspoon of Sirach sauce.
Fair warning, make enough for seconds!
2 tbsp. chopped cilantro
2 tbsp. Mettrum Originals Raw Shelled Hemp Seeds
2 tbsp. parsley
2 tbsp. fresh lime juice
4 tsp. Mettrum Originals Cold-Pressed Hemp Oil
1 15oz cam of chickpeas, drained and rinsed
1 small garlic clove, pressed
1/3 cup cherry tomatoes, sliced
1/3 cup red onion, sliced
1/3 cup feta
Pinch of sea salt
Pinch of fresh ground black pepper
In a medium bowl combine chickpeas, basil,
hemp seeds, parsley, lemon juice, hemp oil and garlic and toss gently.
Add in cherry tomatoes, onion and feta.
Salt and pepper to taste.
Spoon the chickpea salad in to a serving dish and enjoy!
