Lemon Poppy Seed Muffins

Welcome to our sweet treat, sugar free baking week! We are excited to share 3 unique, sugar free recipes that your family will love. Today we are starting with our Lemon Poppy Seed Muffins.
Maple syrup is a great additive to baked goods. The outcome is a moist, sweet tasty muffin without using any refined sugar! We’ve added Mettrum Originals™ Hemp Seed Flour and our Raw Shelled Hemp Seeds to add a boost of protein, vitamins, fibre and omega 3 & 6.
This tasty recipe was adapted from Hemsley + Hemsley and will yield 6-7 muffins.
½ cup unsalted butter
1½ tsp lemon extract
3 eggs
4 tbsp maple syrup
1 tbsp black poppyseeds, plus extra to sprinkle
1 tbsp Hemp Buds
2 pinches ground tumeric
1/4 tsp bicarbonate of soda
2 tbsp + 1 tsp. coconut flour
2 tsp. Hemp Seed Flour
tiny pinch of sea salt
Preheat the oven to 375 F.
Line a cupcake tin with 6 or 7 cupcake shells.  
In a small saucepan slowly melt butter with lemon extract.
Allow the mixture to cool.
Whisk eggs together with the lemon butter mixture.
Slowly add in remaining ingredients and whisk until combined
Spoon mixture in to cupcake cases
Bake for approximately 15-20 minutes.
Allow to cool on a wire rack.
