Recipe | Strawberry Banana Hemp Seed Oat Bars | Mettrum Originals

 It can be difficult to find an amazing sugar free baking recipe, the thought alone causes some bakers to cringe, but we like a good challenge.
 
This fantastic strawberry hemp seed jam is a delicious alternative to the regular sugar packed, store bought brands. We suggest making the jam a night in advanced so it has time to properly thicken. The sweetness of the strawberries add the sugary taste we crave without having to add any refined sugars.
 
We’ve used Mettrum Originals™ Raw Shelled Hemp Seeds in both components of these scrumptious bars. This fantastic recipe was adapted from Runningwithspoons.
 
Ingredients:
Strawberry hemp seed jam
2 cups frozen strawberries
2 tbsp. maple syrup
2 tbsp. Mettrum Originals™ Raw Shelled Hemp Seeds
1 tsp. vanilla extract
 
Banana oat bars
2 cups rolled oats, divided
2 tbsp. Mettrum Originals™ Raw Shelled Hemp Seeds
1 tsp baking powder
2 medium ripe bananas, mashed
¼ cup maple syrup
1 tsp vanilla extract 
Directions:
Stir frozen strawberries and maple syrup in a medium saucepan over medium heat for approximately 15 minutes.
Bring liquid to a boil, stirring occasionally for 10 minute while the strawberry jam begins to thicken.
Add vanilla and hemp seeds and continue to cook for another 5 minutes.
Let jam sit overnight in the fridge while it thickens.
 
Preheat your oven to 375F.
Line an 8x8 baking dish with parchment paper.
Add 1 cup of oats in to a food processor and blend until it resembles flour.
In a large bowl combine processed oats, hemp seeds, rolled oats and baking powder.
Add bananas, maple syrup and vanilla extract. Stir until it forms a soft dough
Spoon 2/3 of the oat mixture in to your baking pan.
Wetting your fingers, a little bit under the tap first, press the oats into the pan firmly and evenly.
Spread strawberry jam evenly over the oats.
Add a second thin layer of your oat mixture on top of the strawberry jam.
Bake for 30 minutes until the top of your Hemp Seed Strawberry Banana Oat bars turn golden brown.
