The word "cookie" has become synonymous with the word "unhealthy". Recipes are packed full of refined sugars and flours, yet our children still ask for them. But for every indulgent cookie recipe that exists, there are simple tweaks and adjustments that can be customized to suite our lifestyles and health needs.
We would like to share our favorite recipe for Peanut Butter Hemp Seed Cookies. We replaced some of the flour with Mettrum Originals Raw Shelled Hemp Seeds and used honey, as opposed to refined sugar. Adding the hemp seeds changes the cookies' consistency, however it doesn’t change the flavor. These cookies are rich and buttery to the last bite.
¾ cup of natural peanut butter
1/3 cup of raw honey
1 large egg
1/2 cup Mettrum Originals Raw Shelled Hemp Seeds
1/2 cup unsalted peanuts
½ cup organic flour
1 tsp vanilla extract
1/8 tsp sea salt.
Preheat oven to 350 degrees F. In a medium bowl lightly mix raw shelled hemp seeds, organic flour and sea salt. Add in the large egg, honey and vanilla extract to the dry mixture and stir, once combine add in the peanut butter and stir until it forms a soft dough.
Roll into balls 1” in diameter and place on non stick cookie sheet. Lightly flatten with a fork.
Cook for 8 – 10 minutes or until lightly brown around the edges.
Let the cookies cool slightly before removing from the tray to ensure they do not break or crumble.
