This isn't your grandma's potato salad, we took a classic recipe and gave it a new twist! Our light and satisfying Mediterranean Potato Salad is based in Cold-Pressed Hemp Oil and Dijon mustard. Not even a single drop of mayonnaise has touched these baby new potatoes!
Everyone boasts that their potato salad is the best, but we’ll leave it up for you to decide.
1 ½ lbs. baby new potatoes, thinly sliced
2 tsp. Himalayan pink salt
½ cup chopped red onion
¼ cup chopped dill
½ cup Hemp Buds
1/3 cup Cold-Pressed Hemp Oil
2 tbsp. white wine vinegar
2 tsp. Dijon mustard
½ tsp black pepper
¼ tsp. ground coriander
Place thinly sliced potatoes in a medium pot over high heat and bring to a boil.
Add salt and allow potatoes to simmer until tender.
Prepare dressing while potatoes are cooking.
In a small bowl whisk together all vinaigrette ingredients.
Once cooked, place potatoes in a medium bowl and toss with Dijon vinaigrette and dill.
Let salad sit for 20 minutes to absorb the dressing.
Serve and enjoy!
