Pumpkin Spice Muffin

It’s the first day of fall and everywhere you turn all you see is pumpkin spice everything! Let’s be honest, we couldn’t wait to get in on the action!
 
We used our healthy Hemp Muffin Mix to create a scrumptious Pumpkin Spice Muffin. This vegan treat is moist to the last crumb and only takes 20 minutes to bake.
 
We hope you enjoy them as much as we did!
 
Ingredients
 
Muffin
 
1 package Hemp Muffin Mix
1/4 cup sugar
1 tbsp. pumpkin pie spice
1 tbsp. cinnamon
1 tsp. all spice
1 tsp. nutmeg
1 can pumpkin purée
1 flax egg
½ cup coconut oil
1 ¼ cup almond milk
 
Crumble topping
 
1 cup all-purpose flour
¼ cup brown sugar, packed
1 tbsp. pumpkin pie spice
1 tsp. cinnamon
¼ tsp. salt
4 tbsp. melted coconut oil
 
Directions 
 
Preheat oven to 400°F.
Lightly oil or place muffin inners in tin.
In a large bowl stir together muffin mix, spices and sugar.
In a second bowl beat together flax egg, almond milk, coconut oil and pumpkin puree, then combine with dry ingredients.
Mix until contents are well combined.
Spoon mixture into muffin wells.
 
In a small bowl, stir together flour, brown sugar, spices and salt.
Slowly add melted coconut oil and mix until large crumbles form.
Add more oil as needed.
Divide crumble mixture between muffins, pressing down lightly as you go.
Bake for 22-25 minutes and enjoy!
