Summer is all about simple meals with great flavour pallets. Bruschetta, normally considered an appetizer, makes a great side dish, and with the right ingredients, a great meal!
This sweet and savoury bruschetta was made with Mettrum Originals Cold-Pressed Hemp Oil. Not a fan of bryndza cheese? Try substituting it with goat cheese or mozzarella instead.
1 red bell pepper, sliced into strips
1 orange bell pepper, sliced into strips
2 tbsp. dried oregano
¼ cup fresh basil leaves
2 tbsp. + 1 tbsp. Mettrum Originals Cold-Pressed Hemp Oil
pinch of salt
freshly ground pepper
1 baguette, sliced
3 oz bryndza cheese
Preheat the oven to 375 degrees F
Heat 2 tbsp. of hemp oil in a medium pan over medium heat.
Add red and orange peppers, cook until soft.
Sprinkle in pepper, salt and dried oregano, cook for another minute.
Brush top of the baguette slices lightly with remaining hemp oil.
Place baguette slices on a baking sheet lined with parchment paper, oil side up.
Place in the oven, and toast bread until lightly browned, apron 5 to 7 minutes.
Top each piece with pepper mixture, and bryndza cheese.
Place baking sheet back in the oven for 2 to 3 minutes.
Top with fresh basil, and serve immediately.
