Why not end your work week on a good note with these delicious little Eggplant Pizzas! Topped with Mettrum Originals Raw Shelled Hemp Seeds, these tasty treats are rich and juicy.
This creative and fun recipe is quite simple to make. Including prep time, you’ll have dinner on the table in less than 30 minutes! Try them out tonight, you won’t regret it!

1 large eggplant, sliced 1 inch thick
1 cup tomato sauce
10 slices provolone cheese
¼ cup Mettrum Originals Raw Shelled Hemp Seeds
½ cup cherry tomatoes, sliced
¼ cup fresh spinach
¼ Kalamata olives
Preheat your oven to 425 degrees F.
Arrange eggplant slices on a baking sheet and bake for 15 minutes until tender.
Once removed from the oven, switch on your broiler.
Add 1 tbsp. of tomato sauce, cheese, spinach, tomatoes and hemp seeds to each eggplant slice.
Broil for 3 -5 minutes, keeping watch so they don’t burn.
Serve while hot and enjoy.
