We love zucchinis. Tender and juicy, they are the prefect substitute for meat in a classic parmesan dish.
This tasty entrée was made with Mettrum Originals Cold-Pressed Hemp Oil and Raw Shelled Hemp Seeds. Our Hemp Crusted Zucchini Parmesan is so delicious it will quickly become a family favorite!
2 large zucchinis, sliced into ¼ inch rounds.
1 tablespoon Mettrum Originals Cold-Pressed Hemp Oil
1/4 cup freshly grated Parmesan
1/4 cup Mettrum Originals Raw Shelled Hemp Seeds
1/4 cup whole wheat panko
1 tbsp. Italian seasoning
Freshly ground black pepper
Preheat the oven to 450 degrees F.
Line baking sheet with parchment paper.
In a medium bowl, toss zucchini rounds in the hemp oil.
In a second bowl mix parmesan, hemp seeds, panko and Italian seasoning, pepper.
Roll zucchini rounds in breading mixture until coated evenly on both sides then place on your baking sheet.
Bake for 25 – 30 minutes, until lightly browned and crisp.
