Recipe | Power Muffins | The Wellness Soldier

We love seeing our favourite products featured in the recipes of incredibly talented culinary wizards!
Today we are excited to share this amazing Power Muffins recipe created by Cody Lindsay, affectionately known as “The Wellness Soldier.” Cody has made it his life’s work to teach others how to prepare healthy meals. Nothing says healthy like hemp!
We hope you enjoy these as much as we did!
1 ¼ cup All-Purpose Flour
1 cup Shredded Coconut
1 cup Grated Carrot
1 cup Grated Apple
½ cup Raisins
1 tbsp. Hemp Hearts
½ cup Pumpkin Seeds (Roasted)
¾ cup Coconut Sugar (or Brown Sugar)
2 Eggs
¼ cup Melted Butter
5 tsp. Cinnamon
½ tsp. Salt
1 tsp. Baking Powder
2 tsp. Vanilla
Pre-heat oven to 350˚F.
In a small bowl, whisk together eggs, oil and vanilla.
Combine remaining ingredients in a medium bowl and stir.   
Slowly add egg mixture to your dry ingredients, stirring until mixed well.
Line your muffin tin with paper cups, or grease if preferred.  
Spoon mixture into muffin tin, ensuring each cup is 2/3rds full.  
Bake for 30-40 minutes.
When finished, remove from pan and allow to cool on wire rack.
Serve, Eat Well, Be Happy
