Making time for breakfast every morning can be a challenge, eating healthy doesn’t have to be.  
Grab a cookie for you and the kids before you run out the door, or pack it in your lunch. These cookies are loaded with the nutritious goodness needed to help power your day!
Swap out walnuts for pecans and blueberries in place of cranberries or apricots. This recipe is easy to customize to your family’s individual taste!
½ cup coconut oil
1 egg or flax egg
1 cup gluten-free rolled oats
¼ cup dried blueberries
¼ cup pumpkin seeds
¼ cup unsalted sunflower seeds
2 tbsp. cacao nibs
¼ cup hemp seeds (live link)
¼ cup sesame seed
¼ cup dark chocolate chips
2 tbsp. chia seeds
¼ cup crushed walnuts
1 ripe banana
Preheat oven to 350° F.
In a mixing bowl, beat coconut oil and egg (or flax egg). Once combined, mash in a ripe banana.
Using a wooden spoon or beaters, gradually add cookie mix followed with your favorite seeds and chocolate.
Batter will be very crumbly, use your hands to work dough into small balls and place on a parchment sheet roughly 5cm apart.
Cook for 11 minutes.
Let stand for 2 minutes and transfer to a wire cooking rack.
