1¾ cup gluten-free rolled oats
¼ cup dried apricots
¼ cup raisins
¼ cup ground flaxseed
¼ cup unsalted sunflower seeds
¼ cup unsweetened shredded coconut
¼ cup Mettrum Originals Raw Shelled Hemp Seeds
¼ cup quinoa
2 tbsp. chia seeds
¼ tsp. baking soda
¼ cup pure maple syrup
¼ cup unsalted butter, melted
¼ cup canola oil
½ tsp. vanilla extract
Preheat oven to 350° F.
Add 1 cup of rolled oats in a food processor. Pulse on high for 1 minute until oats turn to oat flour.
Add remaining oats, apricots, raisins, flax seed, sunflower, coconut, quinoa, chia seeds, hemp seeds and baking soda.
Pulse food processor until apricots are broken up into tiny pieces.
Combine with honey, melted butter, vanilla and pulse until combine.
Spoon superseed batter into each muffin cup, firmly pressing down.
Bake for 10 – 12 minutes, edges should be golden brown.
