Serve up a healthier donut this weekend with our vegan, hemp-infused lemon donuts. These guilt-free treats are cakey and delicious.
Want to get your kids involved? They are going to love adding the yummy glaze to their snack! Not sure what flavour of glaze to make? Mix it up! We added fresh strawberry, cocao powder and blueberry to icing sugar to make different glazes for our treats. We only have 2 rules for this recipe, have fun and enjoy!
1 cup all-purpose, pastry or banana flour
2 tbsp. Hemp Seed Flour
1 tsp. baking powder
¼ tsp. salt
1/3 cup. almond milk
1/3 cup. raw maple syrup
1 flax egg
2 tbsp. coconut oil, melted
2 tbsp. lemon juice
1 tbsp. lemon zest
1 tbsp. raw vanilla extract
1 cup vegan white chocolate substitute
1 cup vegan dark chocolate substitute

White & dark chocolate mixture
Preheat oven to 350° F.
In a small mixing bowl, combine flours, baking powder and salt, set to the side.
In a large mixing bowl, stir together wet ingredients. Once combined, slowly add in dry ingredients while stirring.
Evenly distribute batter into donut moulds. Want to avoid flat bottom donuts? Spoon mixture into a piping bag and cut an extra wide hole!
Bake donuts for 9 – 10 minutes. Insert a toothpick, if it comes out clean, your donuts are baked!
Let cool before icing.
In a small bowl, melt white or dark chocolate.
Take your donut and dip the top, hover above the bowl to allow excess icing to drip off.
Place on a baking sheet and sprinkle with your desired topping.
Repeat for additional donuts.
