Eating your veggies has never been easier. Zucchini Tots are a great alternative to store bought chicken fingers or tater tots. Preparation, though seemingly intense, is quite easy.
Eat them on their own, or pair them with your favourite dipping sauce. These delightfully tasty tots are high in protein, and packed with nutrients. Want to kick it up a notch? Replace the Havarti with jalapeno Monterey jack!
1 large Zucchini
1 large egg
¼ cup Havarti cheese
3 Tbsp. gluten free bread crumbs
2 Tbsp. Mettrum Originals Raw Shelled Hemp Seeds
¼ cup onion, minced
1 Tbsp. Italian seasoning
Cheese cloth/ tea towel
Preheat oven to 400°F
Line cookie sheet with parchment paper.
Grate zucchini, this should yield 1 cup, packed.
Place Zucchini in the center of cheese cloth, and wring all excess juice / water from the gratings.
In a large bowl stir together hemp seeds, seasoning and bread crumbs.
Add in zucchini, onion, cheese and egg, stir until well combined.
Using your hands, form 1 tbsp. of zucchini mixture into a rounded ball and place on the cookie sheet.
Bake for 16 – 18 minutes, until golden brown.
Serve hot sided with your favorite dipping sauce, and enjoy!
