The summer is coming to an end, gather up the last of those delicious watermelons and let’s make pie! That’s right, we are making watermelon pie and you can top it with all your favourite fruits. Use our recipe as a guideline and go nuts!
Vegan? Replace the egg whites in your meringue with aquafaba for the same scrumptious results!
1 tbsp. Hemp Buds
Your favourite fruits and nuts, sliced and chopped to your liking. We highly suggest adding mint leaves, you’ll be pleasantly surprised how tasty this combination is!
1 cup fine sugar
8 egg whites
¼ tsp. cream of tartar
1 tsp. raw vanilla
Turn the oven broiler on high and place a large slice of watermelon a baking sheet.
Add egg whites or aquafaba to a mixing bowl and beat on high.
Slowly pour in sugar, followed by cream of tartar and vanilla.
Continue to beat until stiff peaks are formed.
To test the consistency, stop the mixer and insert a knife into the mix, pull it out on an angle, it should create a peak. If the peak stays, the meringue is ready.
Spoon meringue mixture onto watermelon, then place on the middle baking rack.
Remove the baking sheet when the peaks of the meringue have browned. This may take less than a minute.
Remove your watermelon from the oven and top with your favourite fruits, nuts and hemp seeds!
Eat, enjoy, repeat!
